As per TYBAICA syllabus we had arranged a guest demo session with our TY students for Sushi Demo today .
Guest Name : Chef Vaishag Vivekanand
At ITM-IHM , on 12th Aug 2019 Monday we conducted culinary demo for our final year students. As they learn skills in advanced Kitchen & bakery they need to have specialized knowledge .
In an effort in the same direction we had honor to welcome Chef Vaishag Vivekanand (Alumni of ITM IHM Navi Mumbai 2014-2017 batch) currently working as DCDP in industry. He enlightened students with Japanese cuisine, their culture and the expectations of Japanese taste buds. The special ingredients were unveiled in front of students and the importance of each ingredient was explained . with his skills he made many delicate , mesmerizing, preparation and also gave simple steps to complete the preparation. Some of the creation are Maki roll, nori maki , Nigiri Demaki and many more.
Students were also encourage to make preparations under the guidance of chef Vaishag. Chef Also demonstrated various creative ways of food plating. lot of focus was given to Japanese aesthetic simplicity and originality of Japanese cuisine.
