Academic Infrastructure

Carrying on with the trend of providing world-class education, ITM campuses are completely state of the art in terms of academic infrastructure & latest technology. The Institute has six full fledged training kitchens. Students will be rotated in the various kitchens before completing the Program. The kitchens are planned by professional chefs taking into consideration accessibility and the present professional Hotel Kitchens. Studio Kitchen is equipped to the international standards keeping in mind the student needs for skill development. The Institute has a compact 60 cover training restaurant open for lunch on all working days and offers a contemporary classical menu with a'la carte facility. A full fledged display bar has been provided to introduce the student chef to the basic principles of food and beverage service. Keeping in mind the hi-tech approach in the food service operations computer education is imparted to the students throughout the course. ITM School of Culinary Arts is a division of the ITM – Institute of Hotel Management. Hence, it has ultra modern classrooms including a State-of- art audio-visual room.

The Basic Training Kitchen
The students build their foundations of Food Production in the Basic Training Kitchen, where they are introduced to the “Principles of cooking.” Here they are taught the significance of hygiene & sanitation, usage of various kitchen equipments & tools, along with the various cuts of meats, fish, vegetables, dough making, and different methods of cooking. The training in this kitchen culminates in the students being able to dish out simple menus.


The Quantity Food Kitchen
Preparing students for catering to a large number of people is the primary purpose of getting them to train in the Quantity Food Kitchen. Here they learn the concepts of bulk cookery within a stipulated time frame, emphasizing on the pre-preparation of various items, but at the same time ensuring that the food is palatable and looks appealing to the eyes. The kitchen is well equipped with steamers, boilers, bratt pans, pulverizer, large drum tandoors and a separate wet wash area.


The Advanced Training Kitchen
Enabling aspiring culinary professionals to turn their ambitions into reality, the Advanced Training Kitchen is fully equipped to handle production of various international cuisines. The focus is on mastering technical-skills giving students the confidence and knowledge to apply what they have learnt to any style of cuisine with finesse.


Demo Kitchen
This kitchen is used by the student’s exclusively for demonstrations which are not conducted by our own in-house faculty and also guest chefs and celebrity chefs of the industry. It’s a fully functional area with Audio Visual equipment and display mirrors.


Bakery and Confectionery
A well appointed area with modern equipments for large scale production of breads, cakes, cookies and pastries. Heavy duty ovens and frozen table tops are some of the unique features of this work area.


Studio Kitchen

This kitchen is basically for media cookery. Cookery related media programs like Master Chef India classes are conducted here.


Information & Technology Laboratory

The campus has wireless-activity throughout enabling students with their laptops to stay connected all throughout, apart from having a dedicated Technology Laboratory. It has 30 P4 computers, with a full suite of software, all with internet facilities and access to printers.


Library

An exhaustive collection of latest journals and books including access to a number of on-line journals is available for students throughout the day. Academic research is given significant importance in ITM-school of Culinary Arts, assisting students to develop their analytical skills & critical thinking abilities.
